  • 4 cups Australian medium rice

  • 3 eggs

  • 1 pack frozen pea, carrot and corn

  • 1 tbsp shallot fine chopped

  • 1 tbsp light soy sauce


Wash the rice and add equal parts rice to water; 4 cups of rice and 4 cups of water to your rice cooker. Drizzle some olive oil into the cooker and leave until rice is cooked and fluffy.


Stir well and place on a plate. Allow rice to completely cool.

Seperate egg yolks and egg whites into bowls and whisk each mixture.

In a hot wok, add 1 Tbsp of vegetable oil and cook egg whites first to remove starch and moisture. This will ensure your ingredients do not become sticky in the wok. Once cooked, place cooked egg whites back into a bowl. Then repeat with egg yolks until they are cooked and fluffy. 

Add rice to wok and mix with cooked egg yolks. Add egg whites and keep stiring until rice and eggs are cooked through and are jumping in the wok. Add vegetables, soy sauce and shallots and stir for 2 minutes  until the fried rice is done.


You may choose to add ham, bacon, chicken, prawns or any ingredients what you would like to add flavour to your Fried Rice.
